Fast & Easy Creole Chicken or Veg

This meal is a real crowd pleaser that only takes 10 minutes to prepare. The vegetarian version is the same, just change the chicken for firm mushrooms.

I like to add vegetables from the season to turn this into a one-pan dish. A fast and easy way to make sure everyone gets their daily dose of vegetables.

Prep

  • Chop the onion. Chop it finer for more sauce, or more roughly if you like it chunky
  • Dice the tomatoes... or open the can
  • Dice the chicken.

Plan

Make sure you have these ingredients:

  • 90 gram Creole Caribbean Spice Paste
  • 400 grams filet of kip or mushrooms
  • 1 onion (about 160 gram)
  • 100 gram diced tomatoes, fresh or canned
  • 1 tablespoon sweet soy sauce
  • 1 tablespoon savoury soy sauce
  • 3 tablespoons oil
  • If you like it spicy: your choice of fresh pepper. I like Scotch Bonnet...

Pleasure

  • Heat the oil with the spice paste in a pan for about 2 minutes to release the flavours.
  • Add the onion and stir fry for about 2 minutes until translucent.
  • Add the chicken or mushrooms and stir fry until done. The finer you diced them, the sooner that will be. But if you like good chunks of meat, allow for some more time.
  • Add the tomatoes. Lower the heat to low-medium and leave to simmer with a closed lid for about 5 minutes. This will give you a rich, tasty sauce.
  • Add salt, peper, sweet and savoury soy sauce to taste and stir fry on high heat for about 2 minutes.
  • Just before serving, leave the pan open with medium heat to reduce the sauce. I prefer my sauce to be a little bit thicker, your preference may differ!
  • Do you like some heat? This is the moment to add your fresh pepper. For a group of people, leave the fresh pepper to be added on the plate.

Psst...

  • For more sauce, add more tomatoes and both sweet & savoury soy sauce.
  • If you like a bit of a sweet in the taste, add some honey.
  • This is a very versatile dish that can be used and re-used in many ways. So I often make a larger batch, to re-use half later in the week. For instance: by just adding beans you create an amazing dish that goes very well with rice.
