This quick curry of chicken or vegetables will make you so happy. You can even use any leftovers in this recepy. Eat with a roti (Indian flatbread) or wrap, this is a real crowdpleaser at our house!
Plan
- 40 gr curry paste
400 g (vega) chicken, meat, fish, vegetables, shrimp. - 3 tbsp oil
- 150 g tomato or 200 ml coconut milk
- Salt and pepper to taste
Prep
- Cut the chicken breast or veggies into pieces
- Cut onion and tomato medium finely
Pleasure
- Heat oil in pan with onion and curry paste.
- Stir-fry for 2 minutes and add the chicken or veggies.
- Stir-fry for 3 minutes over medium-high heat.
- Add the diced tomato and close pan.
- Season with salt and pepper
- Heat up the roti or wraps

- Make extra sauce by adding more tomato
- Boiled sweet potatoes or potatoes are also delicious in the dish.
- Add pieces of green beans or frozen peas and boiled eggs for a one-pot dish
- Stir in (frozen leaf) spinach or cooked lentils
- Use any flatbread of your liking instead of roti or wraps, like a naan, chapati or paratha.
